New Cafe, Fiori e Sale Opening in Los Alamos

A new café is quietly blooming in the heart of Los Alamos. Fiori e Sale, which means “flowers and salt” in Italian, is opening its doors this week for a soft debut at 1325 Trinity Drive. The location was most recently home to Encanto Bistro, which has now undergone a thoughtful rebranding into Fiori e Sale. The café is owned and operated by Ufemia Bernal Rios, who previously co-owned Encanto Bistro.

Bernal Rios’s new concept invites guests into a world of rustic European charm, soulful food, and quiet comfort. With a space that feels like an intimate escape—whitewashed walls, bougainvillea flowers, painted faux windows, and soft Mediterranean touches—Fiori e Sale is more than a place to eat. It’s a place to slow down, eat well, and feel good.

During this soft launch, the café will offer a simple, seasonal menu featuring just a few carefully prepared plates each day—designed with intention and rooted in authentic European flavors. The team is still learning, growing, and developing the full experience, so hours and offerings may vary.

“Right now, we’re keeping things simple,” says owner Ufemia Bernal Rios. “We’re taking our first steps with care — offering good food in a welcoming space, and letting it grow naturally from there."
